Sharing "Lucy Moments" is good for the soul

When the Golden Girls of Class of 72 have a gathering, we not only have delicious food ….




....but we also share our “Lucy Moments” and have a good laugh together. Laughter is such a great thing, that's why we always hear that, "Laughter is the best medicine." Did you know that is true? There is strong evidence that laughter can actually improve health and help fight disease. Our brains can make us healthier and happier through laughter.

My new readers may be wondering what a “Lucy Moment” is? A Lucy moment is when your plans backfire on you because of your own impulsive behavior and create public embarassment, which, of course, ends up being funny to everyone...except you of course. And of course some more - I am an expert. (Lucy comes from the famous comedienne Lucille Ball who specialized in comedic skits in which she unwittingly fell victim to her own best intentions. The resulting TV show, "I Love Lucy" was one of the most successful in history.

Our Golden Girls group all agreed that sharing Lucy Moments with our girlfriends is good for the soul and we do that every time we meet up. There is so much to laugh about and by sharing we are comforted by knowing that we are not alone. Would you agree with me that when one is happy, one will look younger? We don't look like ladies who are more than half a century old, do we?

Wait, don't answer that. Whenever I attend a gathering with the Golden Girls, I always bring a dessert to share with them. This time it was an upside down pineapple cake and here is the recipe .

(p.s. This is simply out of this world with a scoop of vanilla ice cream)

Upside down pineapple cake
Largely adapted from Betty Crocker


Ingredient:
¼ cup butter or margarine
2/3 cup packed brown sugar
9 slices pineapple in juice (from 14-oz can), drained
9 maraschino cherries without stems, if desired
1 1/3 all-purpose flour
1 cup granulated sugar
1/3 cup butter
1 tsp cinnamon,
½ tsp nutmeg
1 tsp vanilla extract
1 ½ teaspoons baking powder
½ teaspoon salt 
¾ cup milk
1 egg

Method:
Heat oven to 350°F. In 9-inch square pan, melt butter in oven. Sprinkle brown sugar evenly over melted butter. Arrange pineapple slices over brown sugar. Place cherry in center of each pineapple slice.
In medium bowl, beat remaining ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour batter over pineapple and cherries.
Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Immediately place heatproof serving plate upside down over pan; turn plate and pan over. Leave pan over cake a few minutes so brown sugar mixture can drizzle over cake; remove pan. Serve warm. Store cake loosely covered.

    This recipe is yummy. Had something like this over Christmas and a friend soaked the cherries in brandy.

    1. I am sure you will. You such a perky and bouncy character and you smile a lot. To cook like me is as easy as ABC because I only know how to do all the simple straight forward dishes and bakes like this pineapple upside down cake. Yes when you soak the cherries in brandy, it should taste much better.

    1. No secret, we are all 57 but there are two of us who is 56. Looking like 40s maybe but not 30s lah. Maybe the photos only. When you see us in person, you might then say, we all look our age. It is okay too because age is just a number. We may be old in age but young at heart and that's more important, right? hehe

  24. your upside down cake is so neat! i've never attempted one though but i always hv the impression that the fruits may drop off when i flip them over! haha! i must tell you that all the golden girls in the photos look fantastic and gave me a very 'sporty' image of them!

  25. hahaha Lena, when I did not know how to bake, I used to wonder the same thing as you. Now I know that upside down means, the fruit is place at the bottom of the cake so when flip over, it is on top. You had the right image of them. All the Golden Girls are very "spotting" and "sporty" :D
