Aunty Lucy is a sharp shooter, don't play, play

When I was in my teens, I was a big fan of a famous Hong Kong actress, Connie Chan. For those who does not know her, she was one of the Hong Kong Cinema's most beloved teen idols in the 60s and 70s.  Her fans were crazy about her. They even wore their hair like her and dressed like her and I am one of them. Anybody out there was a fan of hers too?

One of my favorites of her movies was "The Black Killer" . Of course, she played the heroine. I thought it would be cool to be a sharp shooter and a great fighter. Since then, I have always been curious to hold a real gun in my hand and try shooting. The first time I ever held a gun, was way back in 1993 when I vacationed in Bangkok. I tried shooting with an M16. The targets were some glass bottles. I did not hit a single one. It was no fun at all. Since then, I have not held another gun in my hand.

When I was in California during my last visit, my Quay Lo asked me what I would like to do. I told him I wanted to go shooting. Ask and you shall received, so we all went to the shooting range.

Look at these shooters. Aunty Lucy "Ada gaya" (got style) right? LOL!

There were all kinds of shooting stuff in this shooting club. I have never seen so many guns and handcuffs before. I confess, my youthful imagination was stirred again. It all looked cool to me.

I'm not sure what the handcuffs were for but I guess they get law enforcement people coming in.

The targets available were a large range but we opted for the funny ones.

Below are the targets displaying some of the shots I made. All six shots on target. Not bad ha?

In the car afterward my Quay Lo said he might regret teaching me how to shoot. May be "Tai Wok" (Big Wok means big problem) he said. Now he has to make sure he does not piss off Aunty Lucy. We laughed in the car on the way back.

It was a fun day and when we reached home, it was time to relax, have a glass of wine and prepare for dinner. Guess what wine I found? Looks like they know Lucy was in town.

I looked like this after drinking the "Lucy" wine. Can you read the sign above my head. LOL!

A good dinner need not be fancy or complicated. A fast and simple meal can be very delicious and fulfilling, exactly what I had in mind. It took me less than an hour to get the meal ready to eat. My Quay Lo gave me this recipe and it turned out to be fantastic. The pasta was al dente and the sauce was velvety and rich. We all emptied our plates.  Actually, we could hold them up and ask, “Mirror, mirror on the wall, who is the fullest of them all?”

Linguini Carbonara (recipe from my Quay Lo)

Ingredients:
1 lb linguini
1/4 cup heavy cream
4 eggs
4 oz. bacon 1/2 in diced
4 oz. panchetta
1/2 tsp extra virgin oil
2 tbs chopped Italian parsley
2 Cups of sliced fresh mushroom.
Seasalt and freshly ground black pepper to taste
1 cup grated parmesan cheese (may be substituted with your favorite cheese)
chilli flakes (optional)

Method:
Fill pot with water and add a tablespoon  full of sea salt. Stir well and bring water to boil. Fry bacon and pancetta till crispy. Drain out oil on kitchen towels. When cool, crush them roughly with your hand. Sauté mushroom in the bacon and pancetta oil in the pan. Add a dash of sea salt and ground pepper to taste. Drop the linquini into boiling water and cook for 9 mins or until al dente. In the meantime, combine eggs, cream, olive oil and grated cheese. Whisk till completely mixed. Drain pasta and toss into egg, cream, olive oil and cheese mixture. Add in sautéed mushrooms and crispy pancetta, bacon and chopped parsley, toss, and hit it with a grind of black pepper. Serve while still hot with extra cheese on the table, a crusty loaf of warm Italian bread or French baguette, and a nice tossed green salad. Lots of a good Chianti makes it all even better.

  7. Oh like it...May I know what is pancetta? Which brand for heavy cream that you use? Sorry for too many queries. :)

    1. Jes, pancetta is Italian bacon. Different from American bacon. They are often smoked but also unsmoked. Pancetta is unsmoked pork belly cured in salt and spices such as nutmeg, pepper and fennel. It's then dried for a few months. Very saltish if eat by itself. It has be go with other food as an enhancement of flavor. I use the brand "Beretta" from Italy, now available at Jaya Grocers. You can use whipped cream in place of heavy cream. No worries about queries, happy to clear your doubts.
