This video brings back fond memories when I was an Apple software trainer with the first sole distributor in Malaysia.
I will always be grateful to my ex boss, Mr. Hsu who hired me even though I had no prior knowledge about computers or had even used one before. When the division started, there were only three of us, my boss, me, and his secretary. The first product we sold in Malaysia was an Apple IIe. Then later we sold the Apple Lisa.
I am very grateful for that chance to be on the ground floor of the computer industry and be a part of the team. I am proud to say I did not disappoint him.

In hindsight, being the first person in Malaysia to explore and to demonstrate how a Mac works, and subsequently helping my sales team sell the first batch of them was quite something.
You may think it is silly but each time I bake anything with apples, I can’t help but think of my Apple days. LOL! I loved Apple then and I still love Apple now. This is how happy I was when my Quay Lo gave me an iPad for Christmas.
So here is our latest, and now favorite, Apple dessert – Apple Tarte Tatin. The recipe arrived via chef Josh Emett, New Zealand masterchef, though it is a traditional tart in France, dating back to the 1800s . He recommended to use Braeburn apples but I could not find any so I used Pink Lady. In the original recipe, it did not call for cinnamon or nutmeg. My Quay Lo requested that I add both and I did. Wow! the spices had added a whole new dimension to the flavor of the tatin. While it was baking in the oven, the whole house was filled with its fragance. No wonder, when it was ready, it was consumed so quickly. It was out-of-this-world delicious when served with my homemade vanilla ice cream.
The added spices will change the look of the tart a bit, because it darkens the apples somewhat. If you would like to try this recipe click on the pictures to go get it. My recommendation is to add a tsp of cinnamon and 1/2 tsp nutmeg and mix well with the apples. Note, it is cooked upside down, and will need to be flipped onto a serving plate which you'll learn about in the chef's recipe at the link.

From the original recipe I cut down the sugar and butter by 25 gm. I coated the apples with cinnamon and nutmeg because my Quay Lo requested for it. Due to the addition of the spices, the tart looks so much darker. The look actually does not justify the taste.

DeleteI can definitely vouch for this - it tasted absolutely amazing!! So delicious, the cinnamon and nutmeg flavour really stood out and tempered the tartness of the apple. And the pastry has a nice caramelised crust that was out of this world. I am definitely going to try making thisnsoon. Thanks veron for sharing.

DeleteVeron, need to check with you - the recipe says to move the butter around without disturbing the apples..i imagine that means gently swirling the pan around?? Also, the pastry would have covered everything, how to see if the sugar has caramelised, unless you use a see through dish??
ReplyDeleteYes my dear, you are absolutely right to swirl the pan around. When the butter melts, it will flow out to all sides of the pastry so you can see when the sugar has caramelised. No need to have an x-ray pair of eyes lah. hehe
