Stir fry Potato Leaves in "Fu Yu" (fermented tau foo)

I did not know before that sweet potato leaves is a good source of Protein, Niacin, Calcium and Iron.  From what I found out this is the only vegetable with iodine. It is also a very good source of Dietary Fiber, Vitamin A, Vitamin C, Thiamin, Riboflavin, Vitamin B6, Folate, Magnesium, Phosphorus, Potassium and Manganese.  It seems it can improve breast milk production for lactating mothers.  In the Philippines, it is now a major ingredient of a commercially available food supplement drink .  Old folks believe that it is a remedy which is used to treat diarrhea and dizziness.  WOW!!

Stir fried Sweet Potato leaves (Ipomoea batatas)
in “Fu Yu” (fermented tau foo)


Ingredients

300gms Sweet Potato Leaves
2 cloves Garlic, sliced
3 tsp Chili Fu Yu (use the one with chilly and sesame oil)
¼ cup water
1 chilly sliced

Method

Heat oil in wok and add garlic.  Fry till fragrant.  Add Fu Yu and mashed it with the back of the ladle.  Fry till Fu Yu is fragrant before adding sweet potato leaves.  Fry for a few minutes and add a little water for about 2 minutes then transfer to a serving plate.
